Kombu is a versatile seaweed (brown algae) often used in Japanese cuisine. It's thick fleshy leaves have a supple sea flavour with a hint of smoke.
It can be added to soups, stews, casseroles, and goes well with beef, chicken, fish and seafood, smoked fish, pulses, vinegar,� dried mushrooms and rice.
It is also used to help break down the enzyme inhibitors within beans and lentils and add to the cooking water.
Kombu contains lots of iron, sodium, chromium, fibre, protein, vitamins A, C, D, E, K and the B vitamins. It is high in iodine, calcium, magnesium and potassium.
